Orzo With Chicken And Veggies

Whose children and husband are sick of the same weeknight casseroles and tacos? ๐Ÿ™‹โ€โ™€๏ธ I know mine are.

You know itโ€™s bad when your eight-year-old asks mid-bite, โ€œMom, when are we going to eat something else for dinner?โ€

With that blow to the heart, I tore open my recipe books and whipped up a new dish that is both tasty and realistic for the weeknight scramble of sports practice, homework, and dinner.

Orzo with Veggies and Chicken:

Feeds: 4

Prep Time: 25 min

Key Ingredients:

  • 1 box of orzo noodles
  • 1 zucchini
  • 1 yellow squash
  • 1 red bell pepper (optional)
  • 1 onion
  • ยฝ can of sun dried tomatoes
  • 2 tbsp pesto
  • 1 rotisserie chicken
  • Feta or parmesan cheese

Directions:

  • Cook orzo according to package directions, al dente.
  • Slice zucchini, yellow squash, red bell pepper, onions, and sun dried tomatoes to bite-sized pieces.
  • Shred rotisserie chicken.
  • Saute your choice of veggies in a skillet over medium heat.
  • Mix pesto in for about 4 min total.
  • Add orzo and rotisserie chicken until heated through.
  • Sprinkle with feta or parmesan cheese and serve hot.
